First, you need to go to Google Assistant settings.  You can do this in two ways

Use your voice long pressing your power button or saying “Hey Google” or “OK Google” and say “Open Assistant”.  Or…

Go to Settings > Applications > Assistant > View All Assistant Settings

Once on the wizard settings page:

Scroll to Assistant Voices and Sounds to look for voice output and select Call

Here you can choose your Assistant's talk time.  To select None (except handsfree)
