If you know the name of the app you want to turn off autosave and versions for, you can usually just insert the name in the default write command. However, not all apps use the “com.developer.AppName” format, so you’ll probably want to check what the app looks like by using the following command first:

Find the app’s plist name in the exported list and connect it to the following command. For example, this disables auto-save and file version control for Preview:

defaults write com.apple.Preview ApplePersistence -bool no

Note that TextEdit and some other sandbox apps require a different command:

defaults write com.apple.TextEdit AutosavingDelay -int 0

Now when you open the Versions window, your autosave list is empty and there are no versions to restore to. You will probably want to use this in conjunction with disabling File Lock or you will still end up up with the hassle of duplicate files.
