News Highlights: Breakthrough technology can revolutionize the dairy industry
Could a new technological development from Tel Aviv University researchers soon revolutionize the dairy products we consume? The initiators of the development believe that in the not too distant future we will be able to buy dairy products in the supermarket that are identical in taste and color to the regular dairy products that we consume today, but with a small difference: the dairy products are made from yeast instead of cows.
Behind this development is Professor Tamir Tuller from the Department of Biomedical Engineering at the Iby and Aladar Fleischman Faculty of Engineering at Tel Aviv University. Together with food tech entrepreneur Dr. Eyal Iffergan, Tuller founded the start-up Imagindairy, which tries to do the impossible: make cow’s milk from yeast.
