Local company offers nutritious chocolate to buyers

Since Kelsi’s Kitchen launched in June 2019, Petersen says it’s become a popular treat for customers with and without diet restrictions.

Kelsi Petersen was just 14 when she began baking with crude food. In secondary school, she developed a chocolate treat out of crude ingredients that became famous among her friends. Petersen at last turned into an authorized crude food cook and today, the 29-year-old Idaho Falls local possesses a business considered Kelsi’s Kitchen that sells her chocolate treat in numerous traditional and normal/strength grocery stores all through Idaho, Montana, Wyoming, Utah and California. It’s a cacao bite that comes in five distinct flavors — peanut butter, raspberry, twofold chocolate, mint and orange chia.

“They love them, and it’s fun to find someone who has a friend who can’t eat dairy, or a child who can’t eat gluten and is always looking for a treat,” says Petersen. “Even people who have no dietary restrictions but want to eat healthier and feel better are excited about finding our chocolates.”

The way cocoa bites are made is what makes them special, says Petersen. They are made from only five ingredients: almonds, cocoa powder, coconut oil, honey and a pinch of salt.

Petersen has been making cocoa bites for years after eating a raw diet with his mother for a long time.

When she was a child, her mother was diagnosed with cecal volvulus, a rare form of intestinal obstruction in which the intestines separate from the abdominal wall and twist on themselves, according to Healthline.com.

The operation fixed the problem, but had a negative effect on her digestion, which meant she would be limited in what she could eat. She was restricted to eating only raw foods.

“She always ate healthily, but when her gut turned over, she had to take it to another level,” Peterson recalls.

Cooking for her family became an experiment. Although there was a slight learning curve, she eventually figured out which ingredients mixed and which didn’t, and later attended a culinary school and became a licensed raw food chef, a path her daughter followed years later. “I went to lessons with her. We will take a recipe that is made with conventional food and change it to be prepared with natural foods with fruits, vegetables, nuts and seeds. We went home and people were very interested in learning how to cook such food, ”says Petersen.

Together, she and her mother began teaching lessons. The chocolates Petersen sells today were one of the recipes she teaches in class. Over time, many people who did not want to make their own chocolates offered to pay Petersen to make them. She began fulfilling orders in her spare time, and this became a frequent side income over the years in high school and college.

One day she realizes that starting a business will be a natural continuation of what she is already doing. After launching a website in 2019, she turned to a non-existent Amon business called Green Life Juice to sell her chocolates in the store. “If you like these chocolates and you want to sell them, I have to make them in your commercial kitchen,” Petersen recalled, telling store owners.

They tasted the chocolates and agreed to its terms. Everything was going well until he received devastating news from his mother. “My mother was diagnosed with ALS at the time,” Petersen said. “She kept pushing me to do this when I didn’t think I knew what I was doing.

With her mother’s encouragement and support, she continued to sell her chocolates to friends. It wasn’t long before Broulim’s became one of her clients. Three months after starting her business, her mother died.
