How to Remove Contacts in Mail: All of today’s email services and clients have a lot of features. One of them is the ability to store information about other users you talk to often, like friends, business contacts, or companies. This page shows you how to add and remove contacts in some of the most popular webmail and email programmes. Choose your email service from the list below and follow the steps to move forward.
Years ago, Gmail had a separate section for “contacts.” At some point, Google moved contacts to their own service that was separate from the rest of Google’s apps and services. You can get to your contacts in a few different ways, though. The good thing is that you no longer have to use Gmail to change, delete, or manage your contact information. There are two main ways to get to your Google Contacts: visit contacts.google.com while logged into your Google account, or click the familiar nine-dot menu on any Google page and choose “Contacts.”

Recent contacts/suggested autofill addresses will appear with a lower-case “i” in a blue circle next to them; Tap the i next to the old email address you’d like to remove. In the window that opens, tap “Remove from Recents” or “Delete Contact” to stop the iPhone from suggesting this email address in future.
All email recipients are saved in a previous recipients list separate from Contacts. The autofill feature when addressing an email pulls from Contacts and from the list of previous recipients. I had the same problem. And yes they did go into my Contacts.
If you can’t delete contacts means you might have Restrictions ON. Settings > Screen Time > Content & Privacy Restrictions > Contact : set to Allow Changes. Note: Content & Privacy Restrictions must be enabled to make changes.
