Any word you type after the hash sign will be grayed out. Press the spacebar or newline after the word to turn it yellow and become a tag. Notes can only recognize yellow marks. You can use the Tag Browser to instantly search for notes that contain one or more tags.
You can find the tag browser in the notes folder view in all your other folders. Only currently used tags are displayed here. To use the Tag Browser, just tap on one or more tags and you will get a list of all notes with the selected tags.
